Beef soup
BEEF SOUP
Ingredients:
- 450g of beef stew meat, cubed
- 1 onion, diced
- 2 carrots, sliced
- 2 stalks celery, sliced
- 2 cloves garlic, minced
- 950ml of beef broth
- 2 cups of water
- 1 can diced tomatoes
- 2 potatoes, peeled and diced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
- Heat olive oil in a pot over medium-high heat.
- Add the diced beef stew meat to the pot and brown on all sides, about 5 minutes.
- Once the beef is browned, add the diced onion, carrots, celery, and minced garlic to the pot. Cook for another 5 minutes.
- Pour in the beef broth and water, then add the diced tomatoes (with their juice), diced potatoes, dried thyme, and dried rosemary.
- Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for about 20-30 minutes, or until the vegetables are tender and the beef is cooked through.
- Season the soup with salt and pepper to taste.
- Serve hot and enjoy!
