Beef soup

 BEEF SOUP





Ingredients:

  • 450g of beef stew meat, cubed
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 stalks celery, sliced
  • 2 cloves garlic, minced
  • 950ml of beef broth
  • 2 cups of water
  • 1 can diced tomatoes
  • 2 potatoes, peeled and diced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions:

  1. Heat olive oil in a pot over medium-high heat.
  2. Add the diced beef stew meat to the pot and brown on all sides, about 5 minutes.
  3. Once the beef is browned, add the diced onion, carrots, celery, and minced garlic to the pot. Cook for another 5 minutes.
  4. Pour in the beef broth and water, then add the diced tomatoes (with their juice), diced potatoes, dried thyme, and dried rosemary.
  5. Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for about 20-30 minutes, or until the vegetables are tender and the beef is cooked through.
  6. Season the soup with salt and pepper to taste.
  7. Serve hot and enjoy!
