 MUSHROOM SOUP


Here's a simple recipe for creamy mushroom soup:

Ingredients:

  • 3 tablespoons butter
  • 1 onion, chopped
  • 2 cloves garlic
  • 1 pound of mushrooms, sliced 
  • 4 cups vegetable or chicken broth
  • 1/4 cup all-purpose flour
  • 1 cup heavy cream or milk
  • salt and pepper
HOW TO MAKE 
    1. Melt butter in a large pot over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes.
    2. Add the sliced mushrooms and cook for 10 minutes, or until softened and browned.
    3. Stir in the flour and cook for 1 minute.
    4. Slowly whisk in the broth, bring to a simmer, and cook for 15 minutes.
    5. Use an immersion blender or transfer the soup to a blender in batches and puree until smooth. You can leave some texture if you prefer.
    6. Return the soup to the pot and stir in the cream or milk. Heat through until warmed.
    7. Season with salt and pepper to taste.
Serve hot with a garnish of fresh herbs.
