Beef soup

  BEEF SOUP Ingredients: 450g of beef stew meat, cubed 1 onion, diced 2 carrots, sliced 2 stalks celery, sliced 2 cloves garlic, minced 950ml of beef broth 2 cups of water 1 can diced tomatoes 2 potatoes, peeled and diced 1 teaspoon dried thyme 1 teaspoon dried rosemary Salt and pepper to taste 2 tablespoons olive oil Instructions: Heat olive oil in a pot over medium-high heat. Add the diced beef stew meat to the pot and brown on all sides, about 5 minutes. Once the beef is browned, add the diced onion, carrots, celery, and minced garlic to the pot. Cook for another 5 minutes. Pour in the beef broth and water, then add the diced tomatoes (with their juice), diced potatoes, dried thyme, and dried rosemary. Bring the soup to a boil, then reduce the heat to low and let it simmer uncovered for about 20-30 minutes, or until the vegetables are tender and the beef is cooked through. Season the soup with salt and pepper to taste. Serve hot and enjoy!

  MUSHROOM SOUP Here's a simple recipe for creamy mushroom soup: Ingredients: 3 tablespoons butter 1 onion, chopped 2 cloves garlic 1 pound of mushrooms, sliced  4 cups vegetable or chicken broth 1/4 cup all-purpose flour 1 cup heavy cream or milk salt and pepper HOW TO MAKE  Melt butter in a large pot over medium heat. Add the onion and garlic, and cook until softened, about 5 minutes. Add the sliced mushrooms and cook for 10 minutes, or until softened and browned. Stir in the flour and cook for 1 minute. Slowly whisk in the broth, bring to a simmer, and cook for 15 minutes. Use an immersion blender or transfer the soup to a blender in batches and puree until smooth. You can leave some texture if you prefer. Return the soup to the pot and stir in the cream or milk. Heat through until warmed. Season with salt and pepper to taste. Serve hot with a garnish of fresh herbs.
